San Miguel Pachalum is a communal farm located in Guatemala’s north. It’s owned by a group of small producers who share their farmland and grow coffee communally.
This coffee comes from a plot on the farm called El Cerron, which is managed by Hector Rodolfo Martinez. Hector is an integral part of the community at San Miguel Pachalum. He is extremely passionate about specialty coffee and he offers a lot of support to his neighbours, to help them improve their growing and picking methods.
This is a pacamara variety lot. This variety can be famously difficult to roast but, when done well, it is exceptionally delicious. We spent a lot of time perfecting this roast, and we love how it’s tasting in the cup.
This is the second year in a row we’ve had San Jerónimo on offer. Last year, our staff voted it as their ‘coffee of the year’. We think it’s tasting exceptional again this year, and we hope you enjoy it.
